Makes: 10 sliders

INGREDIENTS:
2 cans Salmon
1 cup bread crumbs, divided
1 cup shredded Monterey Jack cheese
1/2 cup mayonnaise (not salad dressing)
1/4 cup finely chopped onion
¼ Cup finely chopped water chestnuts
1 egg, lightly beaten
1 tbsp. chopped cilantro
½ teaspoon black pepper
1 tbsp. canola oil
8-10 slider buns

DIRECTIONS:
1. Combine Salmon, 1/2 cup bread crumbs, cheese, mayonnaise, onion, cilantro, water
chestnuts, black pepper and egg in a medium bowl; mix well.

2. Form into 8-10 patties (use 1/4 to 1/3 cup mixture per patty); coat each side with
remaining 1/2 cup bread crumbs.

3. Heat oil in non-stick skillet over medium heat. Cook patties 3 to 5 minutes on each side
until golden brown.

4. Place salmon patty on slider bun, top with tomato and a lettuce.
