WHITE FOUR-CHEESE PIZZA
White Four Cheese Pizza

INGREDIENTS
1 pizza dough shell
3 tbsp. extra-virgin olive oil
1 tbsp. Slivered garlic
4 oz. chèvre cheese, crumbled (or feta)
6 oz. Mozzarella, cubed
1/2 cup ricotta
1 medium onion, thinly sliced and sautéed
1/3 cup grated Parmesan cheese
1/4 cup slivered fresh basil


DIRECTIONS
1. Preheat oven to 425°F.
2. Brush a cookie sheet with oil.
3. Combine garlic and remaining olive oil and brush all over top of
pizza crust.
4. Leaving a 1/2-inch border sprinkle on mozzarella; then onions,
chèvre, ricotta and Parmesan.
5. Put in preheated oven and bake until cheese melts and edges of
pie are golden (about 10-12 minutes).
6. Let rest a couple of minutes before cutting into wedges or
squares. Sprinkle with basil.
