INGREDIENTS
1 large Sweet onion
(cut crosswise into 1/8-inch slices)
1-cup all-purpose fl our
1-1/2 tbsp. Sweet paprika
2 tsp. Cayenne pepper
1/2 tsp. Salt
1-cup beer
1 qt. Vegetable oil, more if needed
DIRECTIONS
1. Put the oil in a large, heavy pan with high sides and heat to 375°F. Line
a large baking sheet with paper towels.
2. While the oil is heating, separate the onion slices into rings. Stir together
the flour, paprika, cayenne and salt in a medium bowl, then stir in the beer.
3. When the oil is hot, add a handful of the onion rings to the batter and
toss to evenly coat. Let excess batter drip off, and then gently add them to
the oil. Fry until lightly browned and crisp, 1–2 minutes.
