Minestrone soup is always a welcome comfort food.

Ingredients
2 teaspoon(s) olive oil
3 whole(s) carrots, sliced
1 whole(s) red bell pepper, cut into little squares
8 ounce(s) green beans, no ends, 2-inch length
3 clove(s) garlic, thinly sliced
1/3 cup(s) couscous
1 can(s) (14.5 oz) reduced sodium chicken broth
2 tablespoon(s) tomato paste
1 can(s) (15.5 oz) navy beans, drained and rinsed

Directions
1. In 3 quart microwave safe dish, place oil, carrots, bell peppers, green beans, and
garlic; stir to coat. Cover and microwave on high for 5 minutes.

2. Add couscous, broth, tomato paste, navy beans, 1 cup of water, and 1/2-teaspoon
coarse salt. Cover; microwave on high until vegetables and couscous are tender, 5
minutes. If desired garnish with fresh parsley and cheese.

Serve: 4
